CYCFM: Tell us a little about yourself - are you a Memphis native?

HOLLY: I'm a Memphis native. I graduated from CBU then attended the French Pastry School in Chicago and studied under world champion bakers.

CYCFM: Reason for getting into the artisan bread business:

HOLLY: I've always enjoyed baking which is why I went to pastry school.

CYCFM: How long have you been making breads?

HOLLY:  I've been making breads for five years.

CYCFM: What types of breads/pastries do you usually have available at the market?

HOLLY: I usually bring our famous White Chocolate Bread, Croissants, Pain au Chocolate, Pain aux Raisin, Almond Croissants, Ham & Cheese Croissants, Baguettes, Sourdough, Ciabatta, German Rye, Spelt, and Shortbread.

CYCFM: What is your favorite bread to make?

HOLLY: My favorite items to make are the various croissants.

CYCFM: Tell us about your Christmas French Fruit Bread.

HOLLY: The French Fruit Bread is a traditional French Christmas treat. Used as an energy bar in the Tour de France. Made with Rum soaked Raisins, Dates, Figs, and Apricots. We season it with cinnamon, ginger, and cardamom and sweeten it with honey.

CYCFM: What other breads will be available for the holidays?

HOLLY:  We also have Panettone & Chocolate Panettone for Christmas beginning this weekend. The Panettone is a traditional Italian Christmas dessert. Made with Raisins, Candied Lemon Peel, & Candied Orange Peel. The Chocolate Panettone is a delicious take off the traditional one. It's a mixture of dark and milk chocolates and caramelized hazelnut flavors.

CYCFM: What made you choose the Cooper Young Market?

HOLLY: We chose the Cooper Young Market because it is such a lively and vibrant market no matter if it's 25 degrees outside or a beautiful warm spring day.

Meet New Vendor:  Ellen Saba & Cake Occasion

CYCFM:  Tell us a little about yourself

ELLEN:  I was born in Memphis but spent most of my younger years in Charleston, South Carolina.  I moved back to Memphis about 20 yrs. ago.

CYCFM:  Why did you decide to get into the cake business?

ELLEN:  I got into making cakes because I wanted to make my youngest daughter’s first birthday cake and special cakes for our two older girls.  After a family tragedy, my husband and I decided life was too short to not do something you love.  So with his blessing I quit my full time job and started making cakes.

CYCFM:  How long have you been baking cakes?

ELLEN:  I've been making cakes for about five years now.

CYCFM: What is your favorite cake to make?

ELLEN: My favorite cake is attached.  It was the first cake I ever made and it was for Bella's first birthday.

CYCFM: What made you choose the Cooper Young Community Farmers Market?

ELLEN: I choose the CYCFM because it is one of my favorite markets. After years of shopping there, I thought my cakes would make a good addition.  The people who shop there also think a lot like I do when it comes to the food they eat.  I believe in knowing exactly what is in my food, and trying to eat as close as possible to unprocessed foods.  And since my family are the main ones to taste test any recipes I make, I would never feed my customers anything I would not feed my own family.
