I know it's horrifically hot and the thought of Fall and root vegetables is the farthest thing from your mind, but those juicy crimson watermelons aren't going to be around forever, so eat 'em up! And while you're at it, booze 'em up too! Here is one of my all time favorite summer entertaining recipes that you should enjoy now, because as the song goes:"Enjoooooooy yourself, it's later than you think..."
1 chopped watermelon (around 5 cups)
1/2 cup Campari or Aperol
1/2 cup Agave nectar
1/2 tsp Kosher salt
Puree the watermelon in a blender and measure out 4 cups (you can keep the rest for the kids or boring preggo ladies like myself :))
Whisk in the liqueur, agave, and salt until dissolved.
Transfer mixture to dish and freeze for 4 hours, scraping the mixture with a fork once every hour to create small flakes.
Scoop into chilled glasses and serve!
